These Mandarin Orange No-Bake Tarts are perfect for the busy back-to-school season. With a simple graham cracker crust and a creamy Greek yogurt filling lightly sweetened, these tarts are a healthy and delicious treat. Ingredients
  

  • 1 cup graham cracker crumbs approx 2 full sleeves
  • 2 tablespoons butter
  • 1 cup plain non fat Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or maple syrup
  • 4 mandarin oranges peeled and in segments

Instructions
 

  • Mix the graham cracker crumbs with the melted butter in a bowl.

  • Press the mixture into the bottom of individual mini tart pans or a mini muffin tin.

  • Refrigerate the crusts to set while preparing the filling.
  • Combine the Greek yogurt with honey or maple syrup in a bowl. Mix well.

  • Spoon the yogurt mixture into the chilled crusts.
  • Chill the tarts in the freezer for at least 1 hour.
  • Top with mandarin segments.
