Get Recipe Ingredients
Scramble the eggs in a nonstick skillet. Add salt and pepper to taste.
Stir in the diced peppers just before the eggs finish cooking.
Remove from heat and stir in the shredded cheese until melted.
Warm tortillas for 10–15 seconds in the microwave to make them easier to roll.
Spoon the egg mixture into each tortilla and roll them up tightly.
Spray each taquito lightly with olive oil.
Cook in an air fryer at 375°F for 6–8 minutes, until golden and crispy.
No air fryer? Bake at 400°F for 10–12 minutes instead.
