Let’s “taco ’bout” how to keep your Cinco de Mayo celebration both flavorful and healthy with my favorite RD-approved strategies and recipes.

Cinco de Mayo is just around the corner, and with it comes vibrant dishes, festive drinks, and plenty of reasons to gather with family and friends. But if you’re working toward health goals, this celebration can feel like a challenge. Between bottomless chips, sugar-packed margarita mocktails, and creamy entrées, it’s easy to go overboard – and wake up on May 6th feeling like you need a reset.

As a registered dietitian and performance nutrition coach who loves global flavors, I’m here to tell you: you can celebrate without sacrificing your wellness goals. The key is balance, smart swaps, and a little planning.

Cinco de Mayo Celebration Smart Tips

1. Moderation Is Key – But Make It Fun

Yes, you can still have the chips and margarita mocktail – just upgrade them! Smart Swap, like choosing baked or air-fried tortilla chips over deep-fried.

Make it festive:
Create the Ultimate Taco Board – a build-your-own taco setup that’s Instagram-worthy and nutritionally balanced. Arrange ingredients by color and texture for a party-perfect centerpiece.

My go-to taco board includes:

  • Proteins: Mojo chicken, seasoned black beans, or lean carne asada
  • Veggies: Pickled red onions, shredded cabbage, sautéed mushrooms, roasted poblanos
  • Carbs: Corn tortillas, lettuce wraps, or thinly sliced jicama “shells” for a low-carb twist

2. Load Up on Veggies (and Get the Kids Involved!)

Add more vegetables like bell peppers, onions, and tomatoes to your dishes for added fiber and flavor. Try these dips to get the kids involved and increase veggie intake:

  • Guacamole: The fiber and vitamins in the avocado keep your gut and party happy. Make a quick and healthy guacamole by mixing ripe avocados with lime juice, chopped veggies, cilantro, garlic, and seasonings.
  • Salsa: An easy recipe to get kids involved and encourage more veggie consumption. Try making your own salsa with fresh tomatoes, onions, jalapeños, cilantro, and lime juice to control sodium levels.

3. Choose Lean Proteins for Balanced Tacos

Protein helps you feel full and keeps your blood sugar stable—especially helpful when party snacks are everywhere.

Great lean protein choices for Cinco de Mayo:

  • Fish like tilapia or mahi-mahi, lightly seasoned and roasted

These Avocado Deviled Eggs get a makeover with some Greek Yogurt and added avocado. So the next time you are going to a potluck-style party, make this easy deviled egg recipe for something different.

Do you love deviled eggs? My family does and we were on a mission to find a healthier way to enjoy this classic appetizer. I grew up eating classic deviled eggs with leftover Easter Eggs. I never really knew what was in them I just knew I liked them. Once I realized they were made with mayonnaise, I knew I had to try a lighter version for my family. So, here came these Avocado Deviled Eggs. The avocado makes an “egg-celent” addition to an already favorite snack.

Nutrition Tip: Most of an egg’s nutrition is in its yolk, including half the protein. So don’t skip the yolk!

What we love about these Avocado Deviled Eggs

I love making these Avocado Deviled Eggs for a snack for myself throughout the week or to take to gatherings. Obviously the eggs themselves are a great source of protein, good fats, and many vitamins that our bodies need. Then add in avocado? We have a power house snack. Avocado is one of my favorite things to keep around the house for healthy fats, fiber, and some heart health benefits.

Key Ingredients for these Deviled Eggs Made with Avocado

  • Eggs- you guessed it
  • Avocado
  • Greek Yogurt

We used Greek Yogurt versus mayonnaise. But if your family still wants the mayo- you can definitely still use a light mayo or whipped dressing, too.

Why are they called Deviled Eggs?

Although there is quite a history on this classic egg appetizer, they are called “Deviled Eggs” for the culinary term “deviled”. Traditional recipes are highly seasoned with spices which is what deviled means. This version stays simple with salt and pepper but you definitely can add in the paprika or some other seasonings to spice it up a bit.

How to make these Easy Avocado Deviled Eggs

First cook the eggs with method of choice. You can boil eggs, cook them in your Instant Pot, or even in the Air Fryer!

Once they are cooled, peel the eggs carefully. Then cut the eggs in half and scoop out the egg yolks into a bowl. Next add in the Greek yogurt and lime juice and mix it with the yolks to make the filling.

Add in a little salt and pepper to your liking and then add the mixture back to the egg whites. Refrigerate until ready to serve and enjoy!

How long can Eggs be kept in the refrigerator?

Deviled eggs are best to be enjoyed within three to four days if properly stored. Make sure to cover them completely in an air tight container and refrigerate them. The avocado in this recipe may change in color a bit but will still be edible.

Spinach dip is one of those great appetizers that can be served year-round – hot or cold. It’s always a must for the Super Bowl or any game day celebration and makes appearances at just about any birthday party, holiday celebration or cookout.

Traditional spinach dip is usually loaded with cream cheese or sour cream. And extra calories and fat. We discovered that you can still make a delicious version of spinach dip without the extra calories! This lightened-up version is made with Greek yogurt for a healthier, but still creamy and delicious, version.

Spinach Dip Ingredients

Here is what you need:

  • Spinach: No brainer here! We opted for fresh spinach over frozen since there’s no need the thaw or drain out all that extra water.
  • Onions & Carrots: We like a few extra veggies in our dip for some added crunch. Finely chop them to add.
  • Plain Greek Yogurt: We used nonfat, but any plain Greek yogurt works.
  • Mayonnaise: To cut the tartness of Greek yogurt, we also used a little reduced-fat mayonnaise to keep things creamy.
  • Parmesan cheese: When it comes to Parmesan, always go fresh over the stuff in the green can. You’ll get so much more flavor.
  • Salt, garlic, and oil: For sauteing and seasoning.

This dip is really easy to throw together too. Saute the onions and carrots, then add the garlic and spinach. Mix the yogurt, mayonnaise, cheese and salt, then add to skillet. Let everything heat together and those flavors combine.

If you’re like me, you’re ready to dip in at this point (let it cool first!) so grab your pita chips, crusty bread or fresh veggies. You can serve this spinach dip hot or cold.

  • Always rinse the asparagus under cold water and snap off the pale woody ends of the asparagus and discard.
  • If the asparagus is stringy, you can peel away the rough skin from the bottom half of the spears with a vegetable peeler.

How to make these Asparagus Puff Pastry Bundles

First make sure to thaw out the puff pastry ahead of time. Place in the fridge overnight or sit out on the counter about 30-45 minutes before you’re ready to use it.

When ready to cook preheat the oven to 350°F.

Then lightly dust a clean surface with some flour. Unroll the puff pastry.

Next use a rolling pin to thin out the pastry until it’s about half as thick. Using a pizza cutter or knife, cut into 6 rectangles.

Divide the goat cheese equally in a diagonal on the puff pastry rectangles. Top the cheese with five asparagus spears. Season with salt and pepper (or any other seasonings of choice).

Wrap the ends of puff pastry over top and then brush with the milk.

Then place them in the oven and bake for about 14-16 minutes or until golden brown. Serve hot and enjoy!

You all know that we have been on a bit of an air-frying craze here at Healthy Family Project. I actually set out to see how many different fruits and vegetables I could air fry and how they turned out. Surprisingly enough, everything we tried was yummy! But, I guess when you start with fresh produce, the results will almost always be delicious.

Cherry tomatoes are super easy to pop into the air fryer! These small, juicy fruits burst with flavor when cooked in an air fryer, and they’re incredibly easy to prepare. Plus, there are several different ways to use air-fried cherry tomatoes, I served them as an appetizer, but you can also pop them into a sauce. More on that below! First things first 🙂

To make your air fryer cherry tomatoes you will preheat your air fryer to 400°F. Next, rinse the cherry tomatoes and pat them dry with a paper towel.

In a mixing bowl, combine the cherry tomatoes, olive oil spray, salt, and pepper. Toss to coat the tomatoes evenly. Then, place the cherry tomatoes in the air fryer basket and spread them out in a single layer.

You will cook the cherry tomatoes for 6-8 minutes, or until they’re slightly blistered and charred. Remove the cherry tomatoes from the air fryer and serve immediately.

I really enjoy them on top of a WASA cracker with a little cream cheese and fresh rosemary! Basil and/or thyme would also be delicious—just grab what’s growing in the garden!

While it’s possible to freeze air fryer cherry tomatoes, it’s not recommended. The texture and flavor may change, and they may become mushy when thawed. If you end up wanting to freeze some, use those in pasta sauce.
