I am not the best gardener, I do not have a green thumb. I can definitely learn a few things from Amanda and her Beginners Gardening Tips, but the one thing that always seems to do well in my little backyard garden is eggplant. And I always seem to have them in abundance…do you live in the Tampa area? Leave a comment and I’ll share some with you 🙂

In the meantime though, I like to experiment with different ways to make eggplant dinners for the family. I have made individual eggplant parmesan crisps (the kids call these eggplant pizzas) and the team here at Healthy Family Project said that I have to try our Stuffed Eggplant Rollatini next.

Air Fried Eggplant Pasta

But since I have been on an air fryer kick lately, I decided why not make a version of the eggplant pizzas and the rollatini and add in some whole wheat pasta. The result was delicious! And the kids loved it!

Air frying eggplant results in a crispy texture on the outside while maintaining a tender and creamy inside. The air-frying process allows the eggplant to develop a golden brown crust, providing a satisfying crunch. The flavor of the eggplant itself remains prominent, and any seasonings or coatings you add will contribute to the overall taste. Since air frying requires minimal oil (I just sprayed mine with olive oil spray before cooking), the meal is lighter compared to deep-frying.

I used whole wheat pasta, whole grains are important to a well-rounded diet. I also used jarred pasta sauce and added in some fresh veggies for added flavor as well as nutrition. Overall, this recipe is perfect for a nutritious and easy weeknight meal.

In case you have an abundance of eggplant in your garden, or maybe you don’t cook with eggplant very often, I thought I would share some tips for cooking with eggplant.

Tips For Cooking With Eggplant

  1. Choose the Right Eggplant:
    • Look for eggplants that are firm, with smooth, shiny skin.
    • Smaller eggplants tend to have fewer seeds and a milder flavor.
  2. Prepping the Eggplant:
    • Wash the eggplant and pat it dry before cooking.
    • You can peel the skin if you prefer a softer texture, but leaving it on adds color and nutritional value.
  3. Salting (Optional):
    • Salting eggplant slices and letting them sit for about 30 minutes can draw out bitterness and excess moisture. Rinse and pat dry before cooking.
  4. Slicing:
    • Cut the eggplant into uniform slices or cubes to ensure even cooking.
  5. Oil Application:
    • Brush or toss the eggplant with a small amount of oil before cooking. This helps with browning and adds flavor.
  6. Seasoning:
    • Season the eggplant with your favorite herbs and spices. Eggplant pairs well with garlic, basil, oregano, thyme, and cumin, among other seasonings.
  7. Cooking Methods:
    • Roasting/Baking: Roast in the oven for a tender, caramelized texture.
    • Grilling: Grill for a smoky flavor and nice grill marks.
    • Sautéing: Quick sautéing in a pan with oil is great for smaller pieces.
    • Air Frying: Achieve a crispy texture with less oil using an air fryer.
  8. Don’t Overcrowd:
    • When cooking, avoid overcrowding the pan or air fryer basket to ensure even cooking. Cook in batches if needed.
  9. Monitor Cooking Time:
    • Eggplant cooks relatively quickly, so keep an eye on it to prevent overcooking. The goal is a tender texture without becoming mushy.
  10. Pairing:
    • Eggplant works well in various dishes, such as ratatouille, moussaka, eggplant Parmesan, or simply grilled and served as a side dish.
  11. Experiment with Marinades and Sauces:
    • Marinating eggplant before cooking can infuse it with additional flavors. Experiment with different marinades or serve with your favorite sauces.

Why does eggplant brown?

Eggplant tends to brown when exposed to air due to a process called enzymatic browning. This reaction occurs when certain enzymes present in the eggplant, particularly polyphenol oxidase, come into contact with oxygen. Keep in mind that while the browning of eggplant is a natural process, it doesn’t necessarily affect the taste or safety of the vegetable. It’s more of an aesthetic concern.

How to store your Air Fried Eggplant Pasta leftovers

Store any leftover air-fried eggplant pasta in the refrigerator. It’s best to consume the leftovers within 2-3 days for optimal taste and texture. When you’re ready to eat the leftovers, you can reheat the air-fried eggplant separately in the air fryer for a few minutes to restore its crispiness. Reheating in a microwave may make it a bit soft, but it will still be delicious.

Ingredients

For the sauce:

  • 1 Tbsp olive oil
  • 1 cup sweet onion diced
  • ½ bell pepper chopped
  • 2 cloves garlic diced
  • 24 oz Marinara sauce
  • 1 Tbsp fresh or dried basil
  • ½ Tbsp Oregano or other Italian seasonings
  • Salt and pepper to taste
  • 16 oz whole wheat spaghetti noodles cooked and drained
  • Shredded parm or mozzarella cheese optional for serving

For the eggplant:

  • 1 Medium eggplant peeled and chopped into cubes
  • 1 cup flour
  • 1-2 eggs slightly beaten
  • 1 cup cold water
  • 1 cup breadcrumbs

Instructions

  • In a large pot, add in the olive oil and heat until medium heat.
  • Add in the onions, bell peppers, and garlic.
  • Saute for a few minutes until softened.
  • Add in the jar of marinara, basil and seasonings.

  • Stir and let simmer as you cook the eggplant.
  • Make a line up of bowls with the water, flour, eggs, and breadcrumbs.

  • Dip the eggplant cubes in order into the water, the flour, then the egg, then the breadcrumbs.

  • Repeat for all of the cubes. You can do this with several pieces at a time.
  • Heat up your air fryer to 400 degrees and fry the pieces in batches until crispy. about 12-15 minutes total (flipping halfway through) depending on size of the eggplant cubes.
  • Then serve the fried eggplant over the spaghetti with the sauce.

Ingredients

  • 4 large potatoes
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp dried rosemary
  • Fresh parsley for garnish if desired

Instructions

  • Peel the potatoes, then slice off the tops and bottoms followed by the sides to create flat edges. Slice down the peeled potatoes lengthwise to create 3 even thick pieces.
  • Place one thick piece potatoes between a pair of wooden chopsticks or skewers and slice vertically.

  • Flip the potato and slice diagonally. Repeat with all the potato slices.
  • Mix together olive oil, salt, black pepper, dried oregano, onion powder, garlic powder, paprika and dried rosemary in a small bowl.
  • Preheat the air fryer for 5 minutes. Line the basket with parchment paper and arrange the potatoes without overcrowding. Brush seasoning mixture over the potatoes. Cook for 10 minutes then shake and cook for another 8-10 minutes or until golden brown.
  • Transfer to a plate and garnish with fresh parsley. Serve immediately.

Ingredients for these Air Fryer Roasted Ranch Potatoes

This air fryer potato recipe really couldn’t get much easier! We love making this easy side dish on busy weeknights. But, they are just as delicious on weekends or even to accompany some of your favorite BBQ foods. In fact, with only about 2 minutes of prep time, this is a side dish that the kids can make 😉

We paired these with some roasted pork tenderloin and it was a fantastic combo.

We love using our air fryer, here are a few of our favorite air fryer recipes. Some of them may surprise you!

Nutrition Tip: Yellow potatoes, with their skin on, have more potassium than a medium-sized banana along with half your daily Vitamin C needs.

Ranch Seasoning Goes Great with Potatoes

If you are unfamiliar with ranch seasoning, that is okay! You can find it in most grocery stores where the seasoning packs are or even by the ranch dressing itself. It may say “Ranch Dressing Mix” or “Dip”. But it is a powdery mix made up of dried buttermilk and herbs such as dill, parsley, chives, and seasonings.

How to make ranch potatoes in the Air Fryer

First wash your potatoes if necessary. Then add all of the ingredients into a mixing bowl and use a spoon to toss and coat until well combined.

Then pour the potatoes onto your Air Fryer tray or basket. Place in the Air Fryer and set to 400 degrees F. Then cook for about 10-12 minutes until soft. I rotated them halfway for even cooking. The time may vary slightly depending on the size of your potatoes.

Then serve them hot and garnish them with some chopped green onions for even more flavor!

Oven Instructions

Don’t have an air fryer? No problem! Just mix all of the ingredients together and pour onto a baking sheet and then roast them in the oven at 400°F for about 20 minutes.

Air fryers have revolutionized the way we cook, making it possible to achieve delicious food quickly without the need for excess oil or deep frying. You all know that we have been on a bit of an air-frying craze here at Healthy Family Project. I actually set out to see how many different fruits and vegetables I could air fry and how they turned out. Surprisingly enough, everything we tried was yummy! But, I guess when you start with fresh produce, the results will almost always be delicious.

Cherry tomatoes are super easy to pop into the air fryer! These small, juicy fruits burst with flavor when cooked in an air fryer, and they’re incredibly easy to prepare. Plus, there are several different ways to use air-fried cherry tomatoes, I served them as an appetizer, but you can also pop them into a sauce. More on that below! First things first 🙂

How To Air Fry Cherry Tomatoes

To make your air fryer cherry tomatoes you will preheat your air fryer to 400°F. Next, rinse the cherry tomatoes and pat them dry with a paper towel.

In a mixing bowl, combine the cherry tomatoes, olive oil spray, salt, and pepper. Toss to coat the tomatoes evenly. Then, place the cherry tomatoes in the air fryer basket and spread them out in a single layer.

You will cook the cherry tomatoes for 6-8 minutes, or until they’re slightly blistered and charred. Remove the cherry tomatoes from the air fryer and serve immediately.

Air-fried cherry tomatoes are a healthy, delicious, and easy-to-prepare snack or side dish. They’re a great way to add some variety to your diet and help you get your daily vitamin C. I really enjoy them on top of a WASA cracker with a little cream cheese and fresh rosemary! Basil and/or thyme would also be delicious—just grab what’s growing in the garden!

Air fryer cherry tomatoes have a sweet and tangy flavor with a slightly charred and exterior. The olive oil spray and simple seasonings add a bit of depth of flavor that complements the natural sweetness of the tomatoes.

While it’s possible to freeze air fryer cherry tomatoes, it’s not recommended. The texture and flavor may change, and they may become mushy when thawed. If you end up wanting to freeze some, use those in pasta sauce.

To make them you will begin by preheating your air fryer as directed. You can cut them in half or roasted them whole. I prefer roasting them whole before they are easier to eat that way…because you still have the stem to hold onto.

Now you will spray the peppers with olive oil. Then, you will sprinkle them with a little salt and pepper.

Finally, place the peppers in the air fryer basket and cook for 6-9 minutes, until they’re tender and slightly charred.

Making air fryer butternut squash fries is easy and takes just a few steps. First, you will preheat your air fryer as directed. While it heats up, peel a butternut squash and cut it into thin, fry-shaped pieces. Toss the pieces in a bowl with a little bit cornstarch, olive oil spray and your favorite seasonings, such as garlic powder, paprika, or cumin.

Once the air fryer is hot, place the butternut squash fries in the basket in a single layer. Cook for a total of 18 minutes, giving them a shake every 5 minutes or so. The fries will be crispy and golden brown. Serve hot and enjoy!

Making air fryer grapes is so easy. You’ll need the following ingredients:

  • 1-2 cups of seedless grapes
  • olive oil spray
  • Salt and pepper

Now, to make them preheat your air fryer as directed. Next, rinse the grapes and pat them dry with a paper towel.

Then, in a bowl, spray the grapes with the olive oil spray and sprinkle on salt and pepper. Toss them gently to coat them evenly.

After they are coated, place the grapes in the air fryer basket in a single layer. Finally, air fry the grapes for 10 minutes, shaking the basket once or twice to ensure even cooking. Remove the grapes from the air fryer and let them cool for a few minutes before serving.

Then instead of being loaded down with greasy dough, they’re made with healthy whole wheat protein wraps. Of course, they’re cooked in the air fryer so they’re nice and crispy.

I mean, at first glance you may think I’m crazy, but if you really think about it, what’s not to love about peanut butter and jelly with the added nutrients and natural sweetness of sweetpotatoes?? Healthy. Nutritious. Naturally sweet. Delicious. I mean, count me in!

Oh, and did I mention there isn’t actually jelly…I used fresh fruit! Seriously, so good. Again, natural sweetness and added nutrients.

Sweetpotato Taquitos

I made Sweetpotato and Black Bean Taquitos for dinner and everyone loved them, they are actually vegan and I didn’t try for that…so, that was an added bonus! Since everyone loved the taquitos and I love how fast sweetpotatoes are ready in the air fryer, I decided to get a little creative and make something a little fun for lunch or a sweet treat.

If you haven’t had a taquito before, it’s basically a rolled tortilla filled with whatever you would like! Sweetpotatoes make a great filler for taquitos because they are healthy, nutritious, loaded with vitamins and very versatile. I mean, I used sweetpotatoes to make a taco-type taquito as well as a PBJ taquito…and they were equally as delicious. I have zero leftovers of either variety, and that’s saying a lot from my crew.

I roasted the sweet potato cubes in the air fryer, then mixed the sweet potatoes and peanut butter in a bowl. Then, all I did was lay out the tortillas and fill them with the pb and sweet potato mixture and fresh blueberries and raspberries, roll them up and toss them in the air fryer. The result is a warm, comforting version of a peanut butter and jelly. So, let’s make some!

PBJ Sweetpotato Taquitos

  • ½ cup peanut butter or your favorite nut butter or nut-free butter
  • 1 cup sweetpotatoes peeled and diced small.
  • 1 cup blueberries and raspberries washed and dried
  • 8 small flour tortillas I used the low-carb variety

Instructions

  • Preheat air fryer.
  • Add the diced sweetpotato to the air fryer basket and lightly spray with olive oil spray.
  • Cook the sweetpotato cubes for 10 minutes at 400 degrees. Shake once or twice.
  • Once sweetpotatoes are done, add them to a medium bowl, add the peanut butter and mix well.
  • Lay the tortillas out on the counter and place 1-2 tablespoons of the sweetpotato mixture into each tortilla.
  • Add fresh fruit right next to the peanut butter and sweetpotato mixture.
  • Roll each tortilla tightly, like a cigar. And place the rolled tortilla, seam side down, in the air fryer.
  • Fill the air fryer basket (it will fit about 8 rolled tortillas).
  • Spray the tortillas lightly with the olive oil spray.
  • Cook in the air fryer for 6-7 minutes at 400°.
  • Enjoy warm or cold…they are delicious either way!

I did diced up the sweetpotato pretty small for this recipe since it was being mixed in with peanut butter and I wanted each piece to be coated.
