Who doesn’t love a good burger?? During the warmer months, as we approach summer, we tend to grill more than usual… not that you can’t grill all year long, but there’s something about cooking outside when the days are longer and the weather has officially warmed up. Just makes ya feel good.

  1. Summer is associated with all the fun outdoor activities like barbecues and cookouts, and grilling burgers is a almost always a part these events. The warm weather and longer daylight hours are perfect for family and friends to gather in backyards, parks, or beaches and enjoy burgers.
  2. Burgers are a classic comfort food that can be enjoyed at a picnic table or the dining room table. They are easy to prepare, cook relatively quickly, and are easily customized.
  3. Burgers offer a wide range of possibilities when it comes to flavor combinations and accompaniments. They can be made with different types of meat (beef, chicken, turkey, or even vegetarian options like veggie burgers or bean burgers), and there are endless options for toppings.
  4. Summer is a time for socializing and celebrating special occasions like holidays, birthdays, and family gatherings. Burgers are a crowd-pleasing meal that are enjoyed by everyone.

That’s a hard one! I love a creative burger…give me some salsa, pineapple, guacamole any day! I look at a burger as a canvas just waiting to be painted! But, I know there are some more traditional types out there…

  4. Onions: Onions can be used in different forms, such as raw onion slices, caramelized onions, or sautéed onions.
  5. Pickles: Pickles are great on burgers for their tangy and briny taste. They provide a refreshing contrast to the other ingredients and add a bit of crunch.
  6. Bacon: Bacon is a popular choice for adding a smoky and savory element. I mean, who doesn’t love bacon?!

  8. Avocado: Slices or mashed are a popular choice for adding a creamy and buttery texture to burgers. Avocado also adds a nutritious component.
  9. Fried Egg: Adding a fried egg to a burger, often referred to as a “breakfast burger,” has gained popularity. The runny yolk adds richness and an extra layer of flavor. My son loves adding egg to his!
  10. Mushrooms: Sautéed or grilled mushrooms can add an earthy flavor to burgers.

How to Cook a Burger Queso

I like to cook my burger to a medium doneness, but that is my preference and yours may be different!

Cooking a burger to medium typically refers to the meat is cooked through but still retains some pinkness in the center. The internal temperature for a medium burger is around 160 to 165 degrees Fahrenheit (71 to 74 degrees Celsius).

Cooking Tips for Burger Medium Doneness

To cook a burger to medium, you can follow these general guidelines:

  1. Preheat your grill or stovetop pan to medium-high heat.
  2. Shape the ground meat into burger patties of uniform thickness, typically around ¾ to 1 inch (2 to 2.5 cm) thick. Press a slight indentation into the center of each patty to prevent it from puffing up during cooking.
  3. Place the patties on the grill or pan and cook for approximately 3 to 5 minutes on the first side.
  4. Flip the patties and cook for an additional 3 to 5 minutes on the second side.
  5. To ensure the desired level of doneness, use a meat thermometer to check the internal temperature. Insert the thermometer into the thickest part of the patty without touching the cooking surface or bone. When the burger reaches an internal temperature of 160 to 165 degrees Fahrenheit (71 to 74 degrees Celsius), it is cooked to medium.
  6. Once the burgers are done, remove them from the heat and let them rest for a few minutes before serving. This allows the juices to redistribute within the meat for a juicier burger.

The United States Department of Agriculture (USDA) recommends cooking ground beef (including burgers) to an internal temperature of 160 degrees Fahrenheit (71 degrees Celsius).

Remember that cooking times may vary depending on the thickness of the patties, heat source, and personal preferences. It’s always a good idea to use a meat thermometer to ensure that the burger is cooked to the desired level of doneness and is safe to eat.

I mentioned that we added queso to our burgers…and well, the title of the recipe is Spicy Queso Burger, but why add queso to your burgers?

Burgers offer a wide range of customization options, and adding queso allows you to get creative and add a punch of flavor. Queso is flavored with various spices, herbs, and even additional ingredients like jalapeños or diced tomatoes, giving the burger a unique twist.

Incorporating queso into your burger combines the classic American burger with elements of Tex-Mex cuisine, adding a new dimension to the traditional burger experience. Especially when you top it with salsa and jalapenos!

To make our queso burgers, it was actually quite simple. We added diced onion and jalapeno peppers directly to the lean ground beef, then mixed in the YoQueiro! White Queso for that extra punch of YUM.

  • ½ sweet onion diced
  • 1 jalapeño diced, seeds removed if desired
  • ½ cup YoQuiero! White Queso
  • 1 ¼ lbs lean ground beef turkey meat would work as well
  • YoQuiero! salsa, jalapeno slices and microgreens for topping
  • Whole wheat buns for serving if desired lettuce also makes for a great "bun"

Instructions

  • Add the lean ground beef, diced onion, diced jalapeno and queso to a large bowl.
  • Mix well using hands, but don't overwork the meat.
  • Form the burgers.
  • Cook on a large griddle (we used our blackstone) or grill until desired doneness. In general, a typical quarter-pound burger will take approx. 3 to 4 minutes per side to reach medium doneness.
  • Serve on a whole wheat bun or lettuce "bun" if desired.

Ingredients

  • 4 ounces chopped mushrooms

No-Fuss Cajun Shrimp Boil Foil Packets

Shrimp boils are traditionally associated with coastal regions, but there is a distinct difference between Georgia or South Carolina boils and Louisiana boils; the heat. This recipe’s Cajun seasoning is what will give it that kick, and andouille is the preferred sausage because of its additional smoked Cajun flavors.

Once assembled, these packets can be cooked in the oven, on the grill or over a campfire. After they’re cooked and cooled, grab a fork and dig in!

Did we mention zero clean-up needed? That’s a win-win in my book!

Nutrition Tip: Shrimp is a low-fat, low-calorie source of protein that packs vitamin B12 and minerals like iodine. It’s also low in one of the lower-mercury fish and shellfish, according to the EPA.

One of my favorite things about this recipe is using fresh summer corn! When buying fresh corn on the cob, always look for green, tightly wrapped husks. Don’t forget to use heavy-duty foil or double up on layers to prevent tears or holes when assembling or cooking foil packets. You don’t want to lose an ounce of the delicious flavor!

What Is a Shrimp Boil?

If you’ve grown up on the coast or in the South — especially the Cajun South — you’ve probably attended your fair share of shrimp boils in your lifetime at church events, football tailgates, or wedding rehearsal dinners. But for those of you not familiar, allow me to enlighten you on the beauty of a traditional Southern shrimp boil.

Shrimp boils, crawfish boils, or even just general seafood boils are wonderful because they require very little prep work and are a fun, communal way to eat outside with the people you love.

It’s in their nature to be messy (you’re cracking shells and eating corn straight off the cob, after all), but I knew there had to be a way to turn this crustacean celebration into something that could be done indoors any night of the week with extremely little clean up.

Can a Shrimp Boil Really Be Mess-Free?

Food tends to bring people together, and one of my favorite culinary celebrations is a good, old fashioned shrimp boil. It’s a guaranteed good time spent with friends, family, and delicious grub.

However, if there’s a downside, it would have to be the mess. (If you’ve ever hosted a shrimp boil, then you know exactly what I’m talking about. The discarded shells, corn cobs, and used flatware is enough to make any host loose their head.)

Luckily for all of us, I’ve developed a solution — this recipe for Cajun Shrimp Boil Foil Packets.

They’re packed full of all the flavors found at a traditional cajun shrimp boil in a convenient and easy-to-clean foil package. Eat them straight from packet after it comes off the heat, bundle up all the discarded bits after your done, and toss in the trash. I told you it was easy! Plus, now you can spend less time cleaning up and more time with your guests.

Key Ingredients for These Cajun Shrimp Boil Foil Packets

  • Shrimp: You’ll use one pound for this recipe, peeled and deveined.
  • Baby Red Potatoes: One pound total, washed and diced.
  • Andouille Sausage: This type of smoked sausage is commonly used in Cajun cooking. It’s spicy, super flavorful, and pairs perfectly with the shrimp and Cajun seasoning.
  • Corn on the Cob: Three ears total, washed and cut in half.
  • Olive Oil: To keep everything from sticking.
  • Cajun seasoning: Three teaspoons total. Buy it in the grocery store/online, or make your own!

Homemade Cajun Seasoning Recipe

Making your own homemade Cajun seasoning is simple. Just combine:

  • 3 tablespoons smoked paprika
  • 2 tablespoons fine kosher salt (or omit it you want to better control the amount of sodium in what you cook with this seasoning)
  • 1 tablespoon ground black pepper
  • 1 tablespoon ground white pepper
  • 2 tablespoons garlic powder
  • 1 tablespoon dried oregano
  • 1 tablespoon cayenne (or more if you like the heat)
  • 1/2 tablespoon dried thyme
  • 1 tablespoon onion powder

Set aside until ready to use, or store with your spices in an airtight container or plastic bag. It should stay good for at least a year.

How To Make a Traditional Cajun Shrimp in Foil

  • Start by preheating your oven to 425 degrees or your grill to medium-high heat.
  • Cut six large pieces of heavy-duty aluminum foil (about a foot long each), and lay out on a flat counter or surface.
  • Divide shrimp, diced potatoes, sliced sausage, and halved corn into 6 even-ish portions, and place in center of foil. Drizzle each with 1 tsp. olive oil, and season with 1/2 teaspoon Cajun seasoning (add more or less to taste).
  • Seal the foil packets by rolling the long side of foil together on top and folding sides in tightly, ensuring nothing will drip out during the cooking process.
  • Bake for 20-30 minutes, or until potatoes are tender and shrimp is cooked through and pink.
  • Serve with a side salad, some coleslaw, or as is. Enjoy!

Variations on this Cajun Shrimp Boil Foil Packets Recipe

  • Leave the shells on like I did when I made it for more flavor.
  • Not a fan of shrimp? You can substitute fish, crawfish, or shelled mussels. Even chicken would work well, but you’ll need to brown it before adding to the foil packet to ensure it’s cooked through.
  • If you don’t like andouille sausage, then swap it with your favorite sausage, like turkey, veggie, or Connecuh.
  • Make it vegan and vegetarian by omitting meat entirely!
  • Add more veggies like onions, bell peppers, hot peppers, cherry tomatoes, sliced cabbage, or minced garlic.
  • If you want to make this without the foil packets, try turning this into a sheet pan recipe and following the instructions for my sheet pan shrimp fajitas recipe.
  • Make it in the slow cooker by adding the potatoes, sausage, corn, 5 cups of water, and 1/4 cup of Cajun seasoning to your Crock Pot. Cook on high heat for three hours, or until the potatoes are fork tender. Then, add the pound of shrimp and cook until just opaque, approx. 10-15 minutes. (Remove the corn before adding the shrimp to make room, if possible. Place on a plate and cover with foil until ready to serve.) Drain, serve, and enjoy!

Storage, Freezing, and Reheating Instructions

  • Store leftovers from your Cajun Shrimp Boil Foil Packets in an airtight container (without the foil) in the refrigerator for up to two days.
  • Reheat leftovers in foil packets in the oven at 350 degrees or on the grill at medium, or simply on a lined sheet pan, until warmed through. You can microwave these leftovers, but it may alter the texture and make your house smell like shrimp.
  • We did not test freezing this recipe — leftovers or ahead of time — and honestly we don’t recommend it. You can, however, use frozen ingredients like shrimp, sausage, or potatoes. Just let them thaw completely and drain before baking so there’s no excess water in the foil packets.

Be Weary of Shrimp Food Allergies

When serving this or any meal with shellfish to little ones, be prepared for them to have an unplanned allergic reaction. This is especially true with toddlers or kids who are having any new food for the first time.

It’s best to let them test out a common allergen like shrimp by having a small taste or amount first, then waiting an hour or so to see if their bodies react. Have Benadryl handy, and never hesitate to take them to the doctor or hospital if you’re concerned over their allergic reaction.

If your child is prone to food allergies, then it’s best to avoid foods like shellfish all together, or meals where other foods are in contact with the allergen.

Ingredients

  • 1 pound peeled de-veined shrimp
  • 1 pound baby red potatoes diced
  • 1/2 pound andouille sausage sliced
  • 3 ears corn on the cob cut in half
  • 6 teaspoons olive oil
  • 3 teaspoons cajun seasoning

Instructions

  • Preheat oven to 425F or preheat grill to medium-high heat.
  • Precut 6 large pieces of heavy-duty aluminum foil (about 12 inches each). Divide shrimp, potatoes, sausage and corn into 6 portions and place in center of foil. Drizzle each with 1 tsp. olive oil and season with 1/2 tsp. Cajun seasoning (add more or less depending on level of heat desired).
  • Roll long side of foil together on top and fold sides in, sealing the foil packet tightly.
  • Bake in preheated oven or grill 20-30 minutes or until potatoes are tender and shrimp is cooked through.

These protein-packed black bean burgers have a southwest flair with a flavorful seasoning combo and added veggies. Plus, they’re freezer-friendly!

Burgers don’t need to be made with meat to be filling and delicious. If you’re trying to eat less meat or just looking for a tasty way to up your veggies, this recipe is it!

Black beans offer a ton of protein and fiber. In fact, canned beans are a great way to satisfy your protein needs. Always look for no-salt-added or low sodium varieties and make sure to give them a good rinse remove excess sodium.

I can’t emphasize this enough – I love these black bean burgers! There are always extras in my freezer for a quick and easy meal when I don’t feel like cooking (which with a baby at home is a lot of days right now). 

Speaking of black beans, did you know you can also use them in baking? I’m not saying you need these Black Bean Brownies in your life, but you probably do.

Before maternity leave, I packed our freezer with soups, lasagna, enchiladas and these burgers. They freeze SO WELL. I often make a double batch and freeze all the extras, along with extra hamburger buns, for those nights when I’m less than enthusiastic about cooking.

How to Freeze Black Bean Burgers

  1. Prepare burgers as directed. Once cooked, set aside on plate to cool completely. You can also place these in the fridge to cool.
  2. Once cooled, place a square of freezer or parchment paper between patties and freeze in ziptop bag. Make sure to squeeze out as much air as possible to prevent freezer burn.
  3. Patties store well in freezer for up to 3 months.

Note: No need to thaw these before reheating, just remove from freezer and cook in a skillet 6-8 minutes per side, or until heated through.

How to make black bean burgers

These black bean burgers are packed with flavor and are easy to customize with your favorite ingredients.

  • Black Beans: Good ol’ pantry staple here, but you can swap for other types of beans if you prefer.
  • Veggies: Peppers and onions are a classic combo but mushrooms, zucchini, carrots and celery would all be good too.
  • Breadcrumbs: Store-bought or homemade, regular or whole wheat – your choice!
  • Egg: Or swap for a flax egg to make this recipe vegan.
  • Seasonings: This recipe calls for a mix of chili powder, cumin and garlic powder. Add more or less depending on how spicy you like things.
  • Toppings: I love the simplicity of tomato and avocado here but any of your favorite toppings from cheese to sauteed mushrooms would be yummy.

Ingredients

  • 1/2 red bell pepper cut in half
  • 1/2 small sweet onion cut in half
  • 15 oz low-sodium black beans, drained, rinsed
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 1/2 teaspoon chili powder
  • 1 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 teaspoon olive oil
  • 4 hamburger buns
  • 1 tomato on the vine sliced
  • 1 avocado sliced

Instructions

  • Place pepper and onion in food processor and blend until finely chopped (if there’s a lot of water after blender, strain it out using a mesh strainer). If you don’t have a food processor, grate or finely chop peppers and onions.
  • Mash black beans in large bowl. Add peppers/onions, egg, breadcrumbs, chili powder, cumin and garlic powder. Season with salt and pepper, to taste, and mix well. Divide into 4 patties.
  • Heat oil in skillet over medium heat. Add patties and cook 6-8 minutes on each side.
  • Top buns with burgers, tomato and avocado.
