In our house, apples are always in stock—they’re my go-to fruit, and I’m all for it! Apples are loaded with fiber, have a long shelf life, and make the perfect grab-and-go snack. So when I found myself meal planning and staring at the abundance of apples in our kitchen, I knew I had to find a way to use them in something savory. That’s when I came across this one-pan meal: chicken sausage with fennel and apples. I decided to use Autumn Glory apples, which have the perfect balance of sweetness, cinnamon-like warmth—ideal for adding a little seasonal flair to a savory dish. I’m not big on sweets, and this recipe checked all the boxes—one pan (less mess!), apples (yay, nutrition!), and it’s savory. The caramel finish of this particular apple variety adds a touch of richness that pairs beautifully with the savory chicken sausage and fennel. It’s also the perfect fall recipe for busy weeknights when life gets hectic.

  • Fennel: You will need two fennel bulbs with the fronds (the green part on top) reserved for later. Choose a fennel bulb that is heavy for its size, white with light green markings, and firm. Avoid bulbs that are yellowing or have brown spots on them. Find more tips for picking the best produce.
  • Autumn Glory Apples: You will need two medium Autumn Glory apples cut into 1-inch wedges.
  • Olive oil and Apple Cider Vinegar: A simple drizzle of olive oil and a splash of apple cider vinegar, along with salt and pepper, will coat everything before it’s roasted to perfection.

How to Make Chicken Sausage with Fennel and Apples

Making this savory one-pan meal is super simple. Just prep your fennel and apples by slicing them, whisk together the olive oil and apple cider vinegar, then toss the sausage, apples, and fennel in it. Lay everything out on your sheet pan, drizzle any leftover dressing from the bowl on top, and bake. In about 40–50 minutes, the sausages will be cooked through, and the apples and fennel will be beautifully tender.

  • 1 lb Italian chicken sausage links (or plant-based sausage alternatives) 4 links
  • 2 medium Autumn Glory apples cut into 1-inch wedges
  • 2 fennel bulbs, fronds reserved cut into wedges
  • 1 tbsp olive oil extra virgin
  • 6 tbsp  apple cider vinegar
  • salt and pepper (add to taste)

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
  • Add the chicken sausage, apple wedges, and fennel wedges to the bowl, tossing to coat evenly.
  • Arrange everything on a sheet pan, spreading out the sausage, apples, and fennel in a single layer.
  • Drizzle any remaining dressing over the top.
  • Bake in the preheated oven for 40–50 minutes, until the sausages are cooked through and the apples and fennel are tender and caramelized.
  • Garnish with reserved fennel fronds before serving.

If you’ve been to the grocery store at all lately, you have noticed that the price of everything has gone up. Especially proteins! So, I have been doing something that I haven’t done since the kids were little. I am making freezer meals. When lean ground beef is on sale, I buy it in bulk (around 8-10 lbs) and I spend a few hours in the kitchen making a bunch of meals. I am adding onions and other veggies to all of them to really stretch out the beef (and to help save on my budget while adding nutrients to our meals).

Why onions? Well, I love them! And there’s a bunch of reasons why 🙂

  • Onions are a flavorful, delicious, and simple way to add a rich depth of flavor to your meals no matter what you might be cooking.

  • Onions are inexpensive and easily accessible since you can find them at every grocery store and produce stand.
  • They are an excellent way to add volume (and vegetables) to your meals so that you can stretch your meat a little bit further.

If you are new to the idea of meal prepping your dinners for the week, one simple way to ease into it is to wash and prep your vegetables like onions and bell peppers for the meals you plan to make throughout the week. You can also brown a large quantity of ground beef and add in those onions and veggies then divide it into dinners all week long. When cooking ground beef I basically add Vidalia onions and either jalapenos (we like it spicy!) or mini sweet peppers to the pan every single time.

If your heart is set on a perfectly-cooked dinner, it’s best to wait until right before you’re ready to cook it before assembling it. This will ensure all your ingredients are as fresh as possible and come together in the most delicious way when cooked.

However, if you want to marinate your protein ahead of time, you can certainly do that in advance. We just wouldn’t recommend leaving all the foods in foil to marinate. If you want to marinate anything, do it in a zip-top bag and transfer into the foil only when you’re ready to cook.

Ingredients

  • 1 lb. chicken tenderloins
  • 12 oz. Snipped Green Beans
  • 8 small yellow potatoes cubed
  • 2 tsp. olive oil
  • 1 lemon

Instructions

  • Preheat oven to 425°F.
  • Cut 4 large pieces of aluminum foil. Evenly divide chicken, green beans and potatoes between foil. Drizzle with ½ tsp. olive oil and season with salt and pepper.
  • Cut lemon in half. Squeeze ½ over foil packets. Thinly slice other half and place sliced in packets.
  • Fold sides of foil in and seal tightly. Place onto baking sheet. Bake 20-25 minutes or until the chicken reaches 165°F and potatoes are cooked.

One nice bonus of the vegetable burger that often gets overlooked, is that they offer a clever, healthy way to utilize leftovers. Substitutions can be made with almost any vegetable, just chop them up or grate them in a cheese grater.

If the mixture is too dry, add a tablespoon or so of milk until the mixture is easy to work with. The optional refrigeration step gives the mixture time to get good and sticky and malleable.

The burgers freeze well, just allow them to cool first, before placing in a zip lock baggie – squeezing out the excess air to prevent freezer burn.

We used canned mushrooms in this recipe to help with the moisture, but if you have fresh that works too you may just need to add more egg whites or milk to help it bind.

How to serve this Vegetable Burger

Sometimes the texture of a veggie burger can be quite different from a traditional beef patty so you may not be sure what goes with it. We served ours up with a quick and easy peach tomato salsa and some fresh romaine lettuce. You can experiment with what you like with fresh sliced tomatoes, additional onions, pickles, or even a sweet mustard!

Then for sides try some baby carrots with dip, pretzels, a salad, or even some potato salad for a classic burger side.

Oat Based Homemade Vegetable Burgers

How to make these Healthy Vegetable Burgers

Step 1: Mix the ingredients in a large mixing bowl until combined. If desired, the mixture can be covered and refrigerated for a few hours for easier handling.

Step 2: Heat a non-stick pan over medium heat and add olive oil. Form patties with the vegetable mixture as you would for a hamburger. 

Step 3: Take an eighth of a cup of the mixture in the palm of your hand and press it into a three fourth inch thick patty, using your thumb to pack in the sides as you rotate the patty in the palm of your hand, making sure that it is tightly packed. (If the burgers are too dry, add a couple tablespoons of milk.)

Step 4: Once the oil is hot, place the veggie burgers on the skillet. Cook on each side for about 5 minutes, or until brown.

Serve the veggie burgers as is, on buns with toppings of choice, or with a dollop of salsa.

  • 2 1/2 cups old fashioned oats
  • 5-7 egg whites adding more as necessary to bind
  • 3 cloves garlic minced
  • ½ cup finely grated carrots
  • 2 celery stalks thinly chopped
  • 1/2 red onion finely chopped
  • 1 8 oz. can of sliced mushrooms diced
  • 2 Tbsp basil or other herbs fresh if possible
  • Salt and pepper
  • 2-3 tbsp milk optional -see notes
  • 1-2 Tbsp olive oil for cooking
