  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 3/4 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup fat-free milk
  • 2 tablespoons molasses
  • 1 tablespoon butter melted
  • 2 large eggs lightly beaten
  • 1/4 cup applesauce

  • 1 Greenridge Michigan Apple finely chopped

Instructions

  • Preheat skillet or griddle over medium low heat; spray with cooking spray.
  • Mix flours, baking powder, cinnamon and salt in bowl.
  • In separate bowl, combine milk, molasses, butter, eggs and applesauce. Stir in juice. Add flour mixture and stir until flour is moistened. Add apple, pecans, tropical fruit and cherries. Stir briefly.
  • Spoon ¼ cup of batter onto skillet. Cook for 2-4 minutes, until underside is brown, edges are dry and bubbles form and pop in center of pancakes. Flip over and cook 1-2 minutes, until undersides are lightly browned.

Equipment

Ingredients

  • 1 lb Italian chicken sausage links (or plant-based sausage alternatives) 4 links
  • 2 medium Autumn Glory apples cut into 1-inch wedges
  • 2 fennel bulbs, fronds reserved cut into wedges
  • 1 tbsp olive oil extra virgin
  • 6 tbsp  apple cider vinegar
  • salt and pepper (add to taste)

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
  • Add the chicken sausage, apple wedges, and fennel wedges to the bowl, tossing to coat evenly.
  • Arrange everything on a sheet pan, spreading out the sausage, apples, and fennel in a single layer.
  • Drizzle any remaining dressing over the top.
  • Bake in the preheated oven for 40–50 minutes, until the sausages are cooked through and the apples and fennel are tender and caramelized.
  • Garnish with reserved fennel fronds before serving.

Fall has finally arrived with its cooler temperatures and gorgeous colors. Well, for those of us in Florida, those are the things we dream of 😉 Every now and then we do get a glimpse of cool air and it’s magical! But enough about Florida…let’s get back to all the amazing flavors of fall! Because we do celebrate those all over 🙂

Apple season is here, with all of those juicy, crisp and delicious apples. Whether you are heading out to the orchard to pick them from the trees yourself or just grabbing some at the grocery store it’s time to stock up on your favorites. 

This crisp apple and spinach salad is an easy and yummy way to celebrate all of your favorite Fall harvest flavors. Tender spinach leaves are combined with honeycrisp apples, and a handful of veggies for a satisfying salad that you will love.

As written, this salad only makes one serving so it would be perfect for a quick healthy lunch for one.  But, you can easily triple or even quadruple the recipe if you would like to use it to feed a crowd or as a side dish for a family dinner.

Apple and Spinach Harvest Salad Ingredients

For this simple Fall salad you only need a few ingredients that you may even already have at home. 

Apples –  You will need a Honeycrisp apple for this salad. This snappy crunchy apple is juicy, sweet, and snack-sized which makes it perfect for salads. 

Spinach –  The leafy base for this salad is spinach. Packed with flavor and nutrients that your body craves. You can use baby spinach or regular spinach for this salad, whichever you have on hand.

Bell PeppersBell peppers will give this salad a nice crunch, and if you use orange or yellow ones a bit of contrasting color too. Remember, we eat with our eyes first so making things look good is important, especially if you are trying to get your family to eat healthy! 

Red onion –  Red onions are mild and sweet, with just a little spice and they pair very well with the sweetness from the apples. 

Pomegranate seeds – Pomegranate seeds are sweet and tangy and they make a delicious addition to this salad and they are good for you too! 

Cinnamon Toasted Almonds – Cinnamon toasted almonds are a crunchy and delicious addition to this salad. They are easy to make and you might even want a few extras because they are a delicious snack too!

Protein Suggestions

There is some protein in this salad from the cinnamon toasted almonds but you could certainly include more for a heartier meal. Here are some plant-based and non-plant based protein options for you to consider adding to this delicious salad.

If you are following a plant-based diet there are plenty of plant-based proteins that you can add to this simple and delicious salad. 

Lentils, quinoa, tofu, and chia seeds are all delicious plant-based proteins that could be included in this salad. 

Non Plant-based Protein Suggestions

Chicken would be a great addition to this salad to make it more of a meal. You could use grilled chicken, sauteed chicken, or even leftover rotisserie chicken. Thinly sliced steak would also be delicious in this salad if you have some.   If you don’t have chicken or steak, some lunchmeat turkey chopped into pieces would be a quick and easy addition.

Simple Substitutions and Variations

Feta cheese –  Feta cheese crumbles would be a flavorful addition to this healthy salad. You could also use blue cheese, goat cheese, sharp cheddar cheese, or a non-dairy cheese option. Just use what you have on hand! 

Walnuts or Pecans –  Instead of cinnamon toasted almonds you could use cinnamon toasted or plain walnuts or pecans to give your salad a satisfying crunch and a boost of protein. 

Romaine lettuce –  If you don’t have any spinach on hand you could use romaine or any type of lettuce to make this quick and simple fall salad.

Roasted Butternut Squash Beet and Fennel Salad

Fall has finally arrived and the holiday season is right on its heels. Salads are always popular side dishes and main meals during the warmer months because they tend to be lighter and don’t sit too heavily after enjoying them. Just because summer is over doesn’t mean that salad season has to be! All the amazing fall and winter produce that is in season makes for incredibly delicious salads too 😉

Salads are a great way to get variety of vitamins, minerals, and flavor in a single meal. You already know that eating plenty of leafy greens, like lettuce, are part of a healthy diet. Some health benefits of eating leafy greens include providing the body with fiber, iron, calcium, and vitamins C and K. This salad also contains beets which are good for your heart and can reduce inflammation. The butternut squash is hydrating, and provides fiber, and vitamin A which is great for your immune system. There are also sweet onions, fennel, and celery – YUM!

Roasted Butternut Squash Beet and Fennel Harvest Salad

This salad is quick and easy to prepare and it’s a great way to use up any leftover roasted veggies that you might have.  In fact, when I was making it, I felt like it looked a salad-version of what we serve during the holidays. So, when you are making your Thanksgiving and holiday dinner plans, buy a little extra or be sure to save some leftovers to make this Fall Harvest Salad with squash, beets, celery, sweet onions and fennel.

Ingredients for our Roasted Butternut Squash Beet and Fennel Harvest Salad

To make this harvest salad you will need to gather and prepare your ingredients so let’s talk briefly about what you will need. 

Salad Mix –  You can’t make a salad without some greens, use your favorite salad mix like spring mix. 

Roasted Butternut Squash – Butternut squash gives this salad a beautiful color and a sweet and delicious flavor. This is a great way to use up any leftover butternut squash you have from a previous meal. 

Beets –  Deep, vibrant red beets also give this hearty fall salad a delicious flavor and color. You can use ready to eat beets for this recipe, or leftover roasted beets. Ready to eat beets can be found in the produce section of your local grocery store, if you are not familiar with them. 

Onions – You will need one cup of sliced onions for this salad. We prefer RealSweet Onions for their sweet and mild flavor. 

Celery Celery will give this tasty salad some nice crunch and flavor. You’ll also get the nutritional benefits of fiber, vitamins A, C, and K, and minerals iron, potassium, and magnesium. 

Fennel – Roasted fennel will give your salad a mellow, sweet flavor that pairs perfectly with the beets, squash, and greens. 

Feta Cheese – Feta cheese with its sharp, salty flavor and crumbly texture gives this fall salad even more delicious, hearty flavors.

How to Make this Roasted Butternut Squash Beet and Fennel Fall Salad

Making this fall harvest salad is very easy. Just combine your salad greens with your roasted veggies, celery, onions, and feta cheese and toss gently. Dress this salad with freshly squeezed lemon juice or your favorite salad dressing right before serving.

When to Serve Roasted Butternut Squash Beet and Fennel Harvest Salad

This salad is versatile, and it can be served as a side dish to a meal or as a main dish for a weeknight dinner. It also wouldn’t be out of place at a dinner party or even on your holiday dinner table.

Roasted Butternut Squash Beet and Fennel Harvest Salad Variations

Lettuce – If you don’t like spring mix, or don’t have any on hand you could also use arugula, spinach, or romaine lettuce to make this salad. A combination of these three would also be delicious. 

Protein –  If you want to make this salad a bit heartier for a main dish you probably want to add a little protein to it. 

You can choose plant-based or non-plant-based protein options to add to this salad. Tofu, chickpeas, lentils, and tempeh are all great flavor and protein-packed plant-based options. 

If you are looking for non-plant based protein options grilled chicken, roasted chicken that has been sliced, and thinly sliced steak would all be tasty additions to this salad. Got leftover turkey? That would be yummy on here too! You could also consider adding a chopped hard-boiled egg to this salad. 

Nuts – If you would like to add a little more texture to this salad and give it some extra crunch, adding some nuts would do the trick and add a little extra protein too. Almonds, walnuts, pecans, or pistachios would work well for this salad. Got leftover candied pecans from holiday dishes? Toss em on this salad!

Cheese – If you don’t have feta cheese on hand or it’s simply not one of your favorite cheeses you can skip the cheese altogether. Alternatively, you could use Parmesan, cotija, goat cheese, or sharp cheddar cheese for this salad.

Can I make this salad in advance?

Yes! You can make this salad in advance and store it in an airtight container in the refrigerator for a day or two. This can come in handy if you have a busy weeknight coming up, or if you want to serve it as part of your holiday meals (which I highly recommend). 

If you are worried about the beets making the other ingredients pink, just keep those separate 🙂

  • 1 ½ – 2 cups roasted butternut squash cooled down. This is the perfect way to use leftovers!
  • ½ – 1 cup ready to eat beets roasted beets would also be delicious!
  • ½ cup celery diced
  • 1 cup RealSweet onions sliced

  • ½ – 1 cup feta I used the fat free mediterranean herb variety because that’s what I had

There are always lots of fun, not so healthy treats surrounding Halloween, but here at Healthy Family Project, we like to show you all of healthy and delicious Halloween snacks that you can serve too!

JAZZ apples have a tasty balance of tangy sweet flavors which makes them perfect for healthy snacking. JAZZ apples are the perfect size for small hands and they can be enjoyed everywhere! Perfect for lunchboxes, after-school snacks, or breakfast on the go.

For our celebrations this year we thought that it would be lots of fun to create a Halloween-themed board celebrating the fact it’s BOO time. Snack boards are great for parties and you can get really creative with them. Pick a theme, decide on your snacks, and display them on the board and you are all set.

Halloween Boo Board

Wondering what kind of board to use for your Halloween celebrations this year? We found this one and it is super cute. If you can’t find a themed board to use you can always use a charcuterie board and decorate it with items like plastic spider rings, plastic skeletons and ghosts, or miniature pumpkins.

What Should I Serve on My Halloween Char-BOO-terie Board

You can serve whatever you like on your Boo board, feel free to get creative. But, we do have some spooky yummy ideas that you should definitely try!

Halloween Mummy Apples

Everyone will love these adorable apple mummies. They are easy to make and delicious and they are going to look great on your Boo Board. All you need crescent rolls, some JAZZ apples, candy eyes, and cinnamon.

How to Make Mummy Apples

  • Slice apples (not to thin)
  • Cut crescent rolls into thin strips
  • Wrap apple slices in the crescent roll strips
  • Bake on 350 for 10 minutes
  • Sprinkle with cinnamon
  • Add eyeballs

Apple Cauldron with Caramel Dip

Hollow out a couple of your apples and fill them with caramel dip. Decorate your caramel filled apples with sprinkles or even gummy worms for an extra spooky effect. Serve with sliced apples.

Spider Web Apple Donuts

These spider web apple donuts are a sweet and salty treat that are sure to be hit. Sliced apples are topped with caramel and pretzels arranged in a criss-cross pattern. Drizzle melted white chocolate over the top of the pretzels for your web and add some mini chocolate chips for “spiders”. These apple snacks are perfect for a party or a fun after school snack. 

Apple Zombies

Kids and grown-ups alike will get a kick out of these simple to make apple zombies. You can even let the kids make them. All you need are some Jazz apples, a vegetable peeler, and some mini chocolate chips. Peel some of the skin off of your apples and the next thing you know they will look like zombies. Add some mini chocolate chips for the eyes to complete the look. 

Halloween Bats

These JAZZ Halloween bats will fit in perfectly on your Boo Board. JAZZ apple slices are combined with marshmallows, raisins, and chocolate sprinkles to make an adorable and tasty bat.

Ingredients for Ambrosia Apple Arugula Salad with Beets and Blue Cheese

Let’s chat for a moment about what ingredients you will need to make this tasty seasonal salad!

Apples – The first ingredient that you will need for this salad is two Ambrosia Gold apples that have been thinly sliced. If you have a mandolin you can use that to get thin, uniformly sliced apples. The Ambrosia Gold apples have a distinct honey sweet flavor, and they are juicy and crisp.

Arugula –  The lettuce for this salad is arugula with its tender leaves, and crispy stems. Arugula has a spicy and slightly tart flavor that pairs well with the sweetness of the apples. 

Red onion – You will need one thinly sliced red onion for your salad. This will give it a bit of crunch and a bit of sweetness too. 

Bell Pepper – You will need ½ cup of chopped bell pepper which will also give your salad even more of a crunchy texture. You can use any color of bell pepper you have on hand, but a yellow bell pepper will give your salad a pop of color. 

Beets – Ready to eat beets can be found in the produce section of your supermarket. These beets have already been peeled and cooked so they can be used straight out of the package. Perfect kitchen hack in my opinion 😉

Radishes – Sliced radishes are also included in this salad and they will give it a zesty flavor as well as a bit of an extra crunch. 

Blue Cheese Crumbles – Blue cheese crumbles give this salad a little bit of a salty flavor to contrast the sweetness of the apples. 

Dried Cranberries – Dried cranberries have a contrasting sweet and tart flavor that pairs perfectly with the peppery arugula.

Cilantro – Cilantro will give your salad a bright, fresh flavor which pairs perfectly with the sweet elements and the fresh lemon juice for your dressing. 

Fresh Lemon Juice – Fresh lemon juice will give your salad a bright, citrusy flavor. It’s perfect with the sweet and peppery elements of this beautiful salad.

Variations and Substitutions 

Cheese –  If you or your family aren’t particularly fond of blue cheese, you can always substitute it. Some excellent choices would be feta cheese, goat cheese, or some shredded aged sharp cheddar cheese. Alternatively, you could skip the cheese altogether. 

Dried Cranberries – If you can’t find dried cranberries, or if they just aren’t for you, there are several substitutions that you can use that will taste amazing.  Dried cherries or apricots, blueberries, or pomegranate seeds would all work really well in this salad. 

Arugula –  If you are worried that your kids won’t like the spicy flavor of arugula you could try a spring mix that contains some arugula as well as other leafy greens for a milder flavor. You could also use spinach, kale, or romaine lettuce or a combination of them for your salad base. 

Lemon juice –  If you want your salad to have a more substantial dressing than just lemon juice, you can use any type of dressing that you like.
