- 12 tbsp unsalted butter softened
- ¾ cups light brown sugar - packed
- 1 tsp vanilla extract
- 2 eggs
- 3 cups ripe bananas - mashed approximately 5-6 bananas
- 2 ½ cups whole wheat flour
- 1 ½ tsp baking soda
- ½ tsp salt
- 1/2 cup pecans chopped, optional
Get Recipe Ingredients
Preheat the oven to 325°.
Spray two loaf pans with non-stick spray.
In a large bowl cream together the butter and sugar with a spatula.
Add in the vanilla extract, eggs, and the mashed bananas.
Continue to mix until well blended.
In another bowl whisk together the flour, baking soda, and salt.
Add the dry ingredients to the wet ingredients and mix until all the ingredients are combined together.
Fold in the chopped pecans.
Pour the batter evenly in the two loaf pans.
Place the pans in the oven and bake for about 50- 60 minutes, or until a knife inserted into the center of the loaves comes out clean.
Let the pans cool for about 20-30 minutes before removing the banana bread and slicing.
